Beta-Glucan as a Novel Functional Fiber: Functional Properties, Health Benefits and Food Applications

Recently the demand for functional food components such as prebiotics, probiotics, and phenolic compounds are increased. Nowadays, β-glucan, dietary fiber, biologically active natural polysaccharide, exhibit properties like a prebiotic effect immune system support. Furthermore, clinical studies have shown that daily intake of 250-500 mg β-glucan has several benefits on system, showing low glycemic index, antimicrobial anti-inflammatory properties. It is polysaccharide composed D-glucose monomers connected with β-glycoside bonds, found in sources yeast (Saccharomyces cerevisiae), some edible mushrooms, algae, cereal grains. β-Glucan more resistant preserves its stability during processing technologies (drying, freezing, etc.). Especially, originated from baker's (S. cerevisiae) many immunostimulatory properties, hypoglycemic, anti-inflammatory, immune-modulatory, antioxidant, anticancer activities. Also, utilization industry increased regarding to their techno-functional gelation, viscosity, solubility, encapsulating agent. Therefore, this review highlights recently published research results health studies, effects interaction other compounds, potential applications β-glucans.
